If it were an animated movie, which more than likely it would, I think that this is who might play the characters.
Narrator: Tom Kenney
Peter: Al Yankovic (There's no beating his impression)
Billy The Bird: Tara Charendoff
Bruce The Duck: David Doyle
Louie The Cat: Richard Horvitz
Grandfather: Tom Kenney
Seymour The Wolf: Jim Cummings
Hunters: Dan Castellaneta
Bob The Janitor: Tom Kenney
Yeah, I watch a lot of cartoons and these folks would make great voices for the Peter and The Wolf Movie.

Okay, I've never even heard Peter & The Wolf (Weird Al's version, that is) but I'll do the best I can by reading the lyrics off of Yankovic! Okay, here I go:
Narrator: The guy from Star Trek who narrates those weird-ass science videos about the universe
Peter: Michael Richards. Wouldn't you just love that?
Billy the Bird: Red Robin from Red Robin. That's why the cat was going after it.
Bruce the Duck: Jeremy from the forum. Is it really fair to give anyone else the job?
Louie the Cat: Isn't this obvious? It has to be Dr. Dre because the first time you see Louie the Cat he's in the grass.
Grandfather: The Rock. If the Rock told you that you couldn't watch TV for a month, you won't watch TV for a month
Seymour the Wolf: hmm...He could be played by completely different people every scene. That would be hilarious!
Hunters: The Three Stooges. Anyone who opposes me shall taste my wrath!
Bob the Janitor: Reuben. Heh.

Wow, those choices are really good! I can't think of anything better.

Narrator: Al (you just can't beat that horrible accent.)
Peter: The kid who played Bobby The Inquisitive Boy
Billy the Bird: Avril Lavigne (see, she's flighty.... ah, nevermind...)
Bruce the Duck: Bruce Willis
Louie the Cat: Louie Anderson
Grandfather: Wilfred Brimley
Seymour the Wolf: Michael Jackson (as the wolf from the "Thriller" video)
Hunters: Elmer Fudd
Bob the Janitor: Bob Newhart

In an animated version, I'd pick:
Narrator: Bill Cosby
Peter: Al Yankovic
Billy the Bird: Frankie Muniz
Bruce the Duck: Brad Garret
Louie the Cat: Steve Buscemi
Grandfather: Christopher Lloyd
Seymour the Wolf: Christopher Walken or Willam Dafoe
Hunters: Trey Parker and Matt Stone (using the Jimbo and Ned voices)
Bob the Janitor: Michael Richards
