As for the other characters (Greedo, Jabba the Hutt, Qui-Gon Jinn, Mace Windu, Count Dooku, Jar Jar Binks, General Grievous, etc.) I'm stuck.

First off, haven't you heard of computer editing? And second, I made Joel Yoda because that's the only pun I could think of for Yoda (Joela). Also, Darth Sidious is the Sith Lord (or maybe in this case, the "Comedy Lord") so it only makes sense.

Yeah but shouldn't it be more based on what they look like and what "makes sense" for the character's relation to Al juxtaposed with who is most like that in the Star Wars universe? The names would be afterthoughts, really.
