Let's see, I know there's a group in MIT called "The Chorallaries" that did a cover of "Midnight Star". A short real-audio clip can be found at:

And another group called "Pennsylvania Six-5000" did a cover of "One More Minute".
And recently I heard of a group called "Gimble" that did a cover of "Spam". It had a bit of "Lasagna" mixed in it. Sounds yummy.
